Slow Cookers

This time of year gets pretty hectic for us. We've got the holidays and parties. We're busy preparing for our January Reset Challenge - one of the busiest times of year in the fitness world. It's way too easy to turn to take out or delivery when cooking feels like too much. Enter the slow cooker. The beauty of slow cooker cooking is that you can set it... and FORGET IT. For a few hours at least! And the prep work can be pretty minimal!

Now, not all slow cookers are created equal. Many use a nonstick coating that contains PFOA which is considered possibly carcinogenic to humans. Others use an aluminum insert which leeches into your food when acidic foods are cooked. Be sure to look for one that has a ceramic insert (All-Clad makes one). Or you could opt for a pressure cooker with a stainless steel insert that has a slow cooking feature (like the Instant Pot).

You can make soups and stews, roasts with veggies, meats for shredding. Here are some recipes that we are fans of:

steak fajitas  (works with any protein!)

veggie frittata

tangy spiced brisket  This food blogger is a favorite!

moroccan chicken stew

chicken chili

roast chicken

garlic herb mashed cauliflower

Go get yourself a slow cooker. The best is when you can set a TIME for the heat setting - once that time has hit, the slow cooker will automatically switch to a "warming" setting. Your food will wait patiently until you are ready to give it some attention.
